Overnight Oats

INGREDIENTS

2 Tbsp rolled oats (if celiac disease, purchase certified gluten free rolled oats)

3 Tbsp unsweetened vanilla almond milk or coconut milk

2 Tbsp plain Greek yogurt or unsweetened almond milk yogurt (such as Kite Hill brand)

1/2 cup frozen or fresh berries such as raspberries, blueberries, and sliced strawberries

2 tsp pure maple syrup

1/4 tsp vanilla extract

Sprinkle of ground cinnamon

5 pecans, chopped

DIRECTIONS

Combine rolled oats and milk together in a jelly jar or glass container. Mix well. Add maple syrup, vanilla and cinnamon. Stir.

Add a layer of berries (1/4 cup), then add Greek yogurt. Top with the remaining berries. 

Seal the jelly jar or cover the glass container with it’s top. Refrigerate at least 4 hours or overnight. Remove and add chopped pecans.
